Chocolate Orange Snowflake Trifle

Two things that equal Christmas food are trifle and Chocolate Oranges.

Why not combine the two in a decadent trifle!

If you don’t fancy the orange twist, just use milk chocolate.

 This is super easy to make, but big on impact and everyone will love to eat it.

Snowflake sponges:

Makes 36 snowflake sponges

 

  • 95 butter
  • 200g light brown sugar
  • 3 eggs
  • 100g milk chocolate, chopped
  • 120ml milk
  • 140g plain flour
  • 60g cocoa
  • 2 tsp baking powder

 

 

Chocolate Mousse Layer:

 

  • 600g Orange Chocolate (or 3 Terry’s chocolate oranges)
  • 600ml double cream
  • 60g castor sugar
  • 700ml whipping cream

 

 

Chocolate topping

  • 100g dark chocolate
  • 100 ml double cream

Step 1

Making the snowflake sponges

Pre-heat the oven to 180C. Grease your tin

  • Heat the milk, chocolate and cocoa until the chocolate has just melted. Leave to cool slightly.
  • Cream together the butter and sugar until just combined (it won’t go all fluffy as there is too much sugar content in the mix).
  • Mix in the eggs one by one until fully combined.
  • Sift together the flour and baking powder. Starting with the flour mix, alternately add the flour and milk mixture to the creamed mix until fully combined.
  • Fill a piping bag with the mix and pipe into the cavities till about half full. Bake in a preheated oven for 8 - 10 minutes or until an inserted cake tester comes out clean.
  • Leave to cool on a wire rack. Repeat with remaining batter. 

Step 2

Making your Chocolate Mousse

  • Melt the chocolate.
  • Whip the double cream until soft and fold in the chocolate

 

 

Step 3

  • Whip your whipping cream until it will just hold a peak

Step 4

Making your Chocolate Topping

  • Chop the chocolate and place in a heat proof bowl.
  • Bring the cream to the boil and pour over the chocolate. Stir until fully melted and mixed.

Step 5

Assembling your trifle

  • Fill the base of your bowl with a layer or chocolate mousse.
  • Arrange the snowflakes around the outside edge of the bowl. You may also want to place some in the centre of the bowl.
  • Fill a piping bag with the whipping cream and pipe behind the snowflakes till just covered.
  • Fill with remaining chocolate mousse.
  • Layer on the remaining whipping cream.
  • Top with the chocolate topping and some more snowflake sponges. Dust with cocoa or icing sugar if desired.
