  • 14g (1 tablespoon) meringue powder 
  • 35g caster sugar  (1/3 cup)
  • 0.6ml (1/8 teaspoon) vanilla extract 
  • Kelly green icing colour 
  • Lemon yellow icing colour 
  • Orange icing colour 
  • Pink icing colour 
  • Sky blue icing colour 
  • Violet icing colour 

Step 1

  • In large bowl, combine meringue powder, 60ml (¼ cup) cold water and 45ml (3 tablespoons) plus 5ml (1 teaspoon) sugar.
  • Whip at high speed for 5 minutes. Add vanilla.
  • Gradually add the rest of the sugar and whip at high speed for 5 more minutes until meringue is stiff and dry.

Step 2

  • Tint 60g (¼ cup) batter each green, yellow, orange, pink, blue and violet using icing colours.
  • Reserve remaining batter white.

Step 3

  • Prepare seven 30cm (12 in.) decorating bags with tinted and white batter.
  • Cut 3mm (1/8 in.) tip in all bags.
  • Prepare 40cm (16 in.) decorating bag with tip 1M.
  • Pipe line of green, yellow, orange, pink, blue and violet batter on inside of 40cm (16 in.) bag.
  •  Fill middle of 40cm (16 in.) bag with white batter.
  • Pipe stars on parchment-lined cookie tin.

Step 4

  • Bake 45 to 50 minutes at 120 degrees C (250 degrees F), or until outsides of meringues feel firm and crisp.
  • Cool completely on tin.
