Healthy ‘One Bowl Wonder’ Banana and Fudgy Chocolate Squares

Ok, so maybe the chocolate chunks aren’t quite so healthy. But pretty much everything else in these little cakes are - and you can always leave out the cheeky chocolate!

The mashed banana in these cakes give a lovely fudgy consistency and mean that very little added sugar is needed.

For a dairy free option, omit the chocolate chunks or use a dairy free alternative. And for gluten free option, use an alternative gluten free flour or an equal mix of rice and potato flours.

If these are a little big for your little ones, why not cut them in half?

Ingredients:

 

  • 225 g peeled and mashed bananas
  • 125 ml water
  • 60 ml coconut oil, melted
  • 1 egg, beaten
  • 200 g plain flour
  • 40 g cocoa
  • 50 g castor sugar
  • Pinch of salt
  • 4 tsp baking powder
  • 1 tsp Vanilla Extract
  • 80 g chocolate chunks*

 

 

*You could use smarties or your favourite chocolate bar chopped up. For a healthier alternative why not try some chopped pecans, hazelnuts or raisins?

Step 1

  • Preheat the oven to 170C.
  • Line your tin with muffin cases.

Step 2

Prepare the Batter

  • In a large bowl whisk together the banana, water, oil, sugar and egg until fully mixed.
  • Sift in the flour, cocoa, baking powder, salt and vanilla. Fold in until just combined.
  • Fold in most of the chocolate chunks, just leaving a few to decorate the top with.
  • Using a piping bag fitted with a perfect fill batter tip, divide the mixture between the tin cavities.
  • Scatter the tops of the cakes with the remaining chocolate chunks.

Step 3

Bake

  • Bake in the preheated oven for 20 minutes or until the slices are well risen and an inserted cake tester comes out clean.
  • Allow to cool for 5 minutes, then transfer each cake to a cooling rack
