Ingredients

  • 42g (3 tablespoons) Meringue powder
  • 400g Icing sugar
  • Kelly green icing colour
  • Lemon yellow icing colour
  • Orange icing colour
  • Pink icing colour
  • Sky blue icing colour
  • Teal icing colour
  • Violet icing colour
  • 720g to 840g of your Favourite Cupcake Recipe
  • 480g decorator icing white 480g (2 cups)

Step 1

  • Make sprinkles one day in advance. Beat meringue powder, icing sugar and 75ml (5 tablespoons) warm water in mixer until peaks form, about 10 minutes.
  • Icing Tip Keep all utensils completely grease-free for proper icing consistency.

Step 2

  • Divide icing into seven bowls (about 60g icing per bowl).
  • Tint icing green, yellow, orange, pink, blue, teal and violet using icing colours.
  • Prepare seven decorating bags with tip 2 and tinted icing.
  • On parchment paper, pipe several lines in each colour; let dry, about 3 to 4 hours

Step 3

  • Prepare sponge following recipe instructions.
  • Bake and cool cupcakes in cupcake cases.

Step 4

  • Prepare decorating bag with tip 2A and decorator icing. Pipe swirls on cupcakes.
  • Break up royal icing lines into small sprinkle shapes. Sprinkle on top of cupcakes.
