Ingredients

  • 1 tbps Cocoa Powder dissolved in 2 tbsp of boiling water and cooled.
  • 120 g self-raising flour
  • 120 g castor sugar
  • 1200 g butter
  • 2 eggs
  • A few drops of vanilla extract
  • Pinch of salt

Step 1

  • Oven - preheated to 180C or 170C for fan assisted
  • Prepare your muffin tin with paper cases

Step 2

  • Cream together the butter, sugar and salt until light and fluffy
  • Add the egg a little at a time and mix. Add the Cocoa mixture
  • Fold the flour into the butter mixture
  • Using a piping bag, pipe the mixture into cases approximately two-thirds full. Or spoon the mixture into the cases if you do not have piping bag

Step 3

  • Bake in the pre-heated oven for approximately 15 - 20 minutes or until the surface springs back to the touch
  • Remove from the oven and cool for a few minutes before removing from the tin
