Pimm's Cake Cones

These gorgeously tasty treats have all that is so perfect about a quintessential British summer; fresh, fruit, sponge cake and of course a dash of Pimm’s!

A great addition to any summer party or BBQ why not try topping with a little scoop of ice-cream too?

If you don’t want to make these alcoholic, you can leave out the Pimm’s.

Ingredients:

  • 12 Ice cream cones

 

Cake Batter

  • 100g castor sugar
  • 100g butter
  • 100g self raising flour
  • 2 eggs, gently beaten
  • 30g strawberries, cut into small chunks
  • 30g apple, peeled and cut into small chunks
  • Zest of one orange

 

Pims Sugar syrup

  • 30g castor sugar
  • 60ml lemonade
  • Mint leaves x 2
  • 2 tbs of Pimm’s - or more to taste. Omit if you do not want to include alcohol.

 

Chocolate Rim

  • 200g white chocolate or 200g of white candy melts

 

Fruit Toppers

  • Selection of Fruits, 200g in total: Berries, Cherries, Apricots, Orange segments, Mint leaves, Cucumber slices etc

Step 1

  • Place the ice cream cones into position on the Ice Cream cone tray, on a baking tray.

Step 2

Prepare the Pimm's Syrup

  • Place the sugar, mint and the lemonade into a small saucepan and heat until the sugar is dissolved.
  • Cool for a few minutes and add the Pimm’s to taste, if using. 

Step 3

Prepare & Bake the Cake Batter

  • Pre-heat the oven to 180C.
  • Cream together the butter and sugar until light and fluffy. Add the eggs a little at a time until fully incorporated. Gently fold in the flour. Fold in the zest and fruits. Place the mixture into a piping bag fitted with the Perfect Fill Batter Tip.
  • Pipe the mix into the cones, to about 1” below the rim. If you put too much mix in, it will be tricky to get the fruit to stay in position.
  • Bake for approximately 15 minutes or until the tops are firm and golden to the touch.

 

Step 4

The Pimm’s sugar syrup

  • As soon as the cones come out of the oven, brush liberally with the sugar syrup.
  • This will give them a fantastic flavour and prevent the top from becoming crusty.
  • Allow to cool.

Step 5

Topping the cones

  • Wash and prepare the fruit.
  • Melt the chocolate or candy melts as per packet instructions. Dip the top of the cones in the melted mix and place back in the cone rack.  Top with the fruit, if the fruit needs a little help to stay in position use some of the melted candy melts or chocolate to help. Place in the fridge to set.
  • If topped with fruit, the cones should be eaten on the same day. They will keep for up to 2 days in the fridge without the fruit.
