Ingredients

  • 180g light brown sugars
  • 6 tbsp honey or golden syrup
  • 2 tbsp orange juice
  • 2 tbsp mixed spice
  • 2 tbsp ground ginger
  • 200g butter
  • 1 tsp bicarbonate of soda
  • 450 g cake flour
  • Pinch of salt

Step 1

Making the Gingerbread Cookies

  • Pre-heat oven to 180 degrees celsius
  • Put the treacle, honey, orange juice, spices and salt and bring to the boil to dissolve the sugar.
  • Take off the heat and stir in the butter and bicarbonate of soda. Leave to cool slightly.
  • Fold in the flour and mix to form a dough. Wrap and leave to rest in the refrigerator for 2 hours or until ready to use.
  • Roll the dough to about 5mm thick, cut the desired shapes and place onto prepared baking trays.
  • Bake for 10 - 12 minutes or until just starting to take colour. Leave to cool.

Step 2

Decorating the Gingerbread Cookies

  • Make the Royal Icing as per recipe instructions.
  • Prepare piping bags with tips 2 & 3 and fill with Royal Icing.
  • Decorate as desired. Leave to set.
  • Form into a wreath and attach together using royal icing. Leave to set until fully dry.
