Cake Batter

  • 8 Eggs, gently beaten
  • 400 g unsalted butter, softened
  • 400 g castor sugar
  • 400 g self-raising flour
  • Pinch of salt
  • 2 teaspoons vanilla extract
  • Cake release

 

Vanilla Buttercream

  • 250 g salted butter
  • 500 g icing sugar
  • 1 teaspoon vanilla extract
  • A little water

 

Sugar Syrup

  • 100 ml water
  • 100 g castor sugar
  • 1 teaspoon vanilla extract

 

 

Step 1

Cake Batter

Oven - preheated to 160C

  • Grease the tin with either Wilton Cake Release or a little melted butter.
  • Cream together the butter, sugar and salt until light and fluffy.
  • Beat in the eggs a little bit at a time until fully incorporated.
  • Gently fold in the flour until just combined.
  • Pour the mixture into the tin and smooth the surface.
  • Bake in the pre-heated oven for approximately 1 hour 10 mins or until the surface springs back to the touch. If the cake starts to colour too much before this time, cover loosely with some foil. Remove from the oven and cool for a few minutes before demolding from the cake from the tin.

Step 2

Vanilla Buttercream

  •  Mix together all of the ingredients, starting with just 2 tbsp of water, adding a little more if the mixture is too stiff.
  • Mix on a high speed for about 5 minutes, or until the mixture is light and fluffy. 

Step 3

Sugar Syrup

  •  Place the water and sugar together in a saucepan.
  • Heat until the sugar melts and turn off the heat.
  • Allow to cool slightly and add the vanilla. T
