  • 140 ml whipping cream
  • 160 g dark chocolate
  • 1 tbsp glucose (optional)
  • 200 g Philadelphia cream cheese
  • 200 g salted butter
  • 450 g icing sugar

Step 1

In a saucepan bring the cream and the glucose to the boil. Turn off the heat and add the chocolate. wait a moment, then stir gently until full melted. Leave this ganache to cool at room temperature and stiffened to a spreadable consistency.

Step 2

In a clean bowl, gently stir the cream cheese to soften - but be careful, do not overwork or it will split and become watery!

Step 3

In a separate bowl, cream together the butter and icing sugar, until light and fluffy - you can beat the buttercream in a freestanding mixer if easier.

Step 4

Add the chocolate ganache a little at a time to the buttercream mixture until all fully combined

Step 5

Very gently stir one third of the chocolate buttercream mixture into the cream cheese. This is to help loosen the cream cheese a little before you mix it all together.

Step 6

  • Add the cream cheese mixture in two batches to the rest of the chocolate buttercream and  very gently stir. Remember do not over mix!
  • Chill until set.
