Christmas Pudding Doughnuts

Everyone loves doughnuts! And these baked ones are healthier than their fried friends.

These little bites would make gorgeous gifts for the festive season. Why not try adding a couple of golden coins into the wrapping too?

Chocolate Doughnuts:

  • 70 g plain flour
  • 15 g cocoa powder
  • ½ tsp baking powder
  • ¼ teaspoon ground cinnamon or nutmeg
  • Pinch of salt
  • 60 ml milk or soya milk
  • A few drops of Vanilla extract or coffee extract
  • 70 g unsalted butter, softened
  • 65 g muscovado sugar
  • 1 egg

To Decorate

  • Holly Sprinkles
  • Royal Icing Mix

Step 1

Making the Doughnuts

Pre-heat the oven to 180 degrees celsius, 170 degrees fan assisted

  • Grease the tin with Wilton Easy Release.
  • Sift the flour, cocoa powder, baking powder, salt and spice together into a bowl.
  • In a separate bowl mix together the milk and Vanilla.
  • Cream together the butter and sugar until light and fluffy. Add the beaten egg a little at a time.
  • Alternate folding in the flour and milk mixtures into the butter mixture until fully combined and the batter is smooth. 
  • Pour into a piping bag and pipe into the tin, filling each cavity about halfway full.
  • Bake in the preheated oven for 10 - 12 minutes or until the sides of the doughnuts pull away from the side of the tin. Allow to cool in the tin for a few minutes before turning out.


Step 2

Decorating the doughnuts

  • Make the Royal Icing mix as per packet instructions; if it is a little stiff, add a little water. Fill into a piping bag.
  • Cut the tip off of the piping bag and pipe a little bit of icing on the top of the doughnut. Top with Holly and Berry Sprinkles.
