Gingerbread Man Spiced Cake

This cake is perfect for those cold wintery nights to enjoy with a cup of tea or spiced chai latte.

The cake will improve with keeping, so if you are not eating straight away wrap it up in foil before decorating.

  • 3 tbsp cocoa
  • 3 tbsp hot water
  • 260g light brown sugar
  • 260g butter
  • 3 tbsp golden syrup
  • 1 tbsp ground ginger
  • 1 tbsp ground cinnamon
  • 3 eggs
  • 6 tbsp milk
  • 300g self-raising flour
  • Selection of sweets and chocolates to decorate

Step 1

Making the Spiced Ginger Cake

Grease your tin. Pre-heat the oven to 170C.

  • Mix together the hot water and cocoa.
  • Cream together the butter and sugar until light and fluffy.
  • Add in the eggs, one by one until fully mixed.
  • Stir in the golden syrup and cocoa mix.
  • Sift in the flour and spices and fold in until just combined.
  • Stir in the milk.
  • Bake in the oven for 50 minutes or until an inserted cake tester comes out clean.
  • Cool in the tin for 5 minutes, then transfer to a wire cooling rack.

Step 2

Decorating the cake

  • Make the royal icing as per recipe instructions.
  • Using a little royal Icing, attach the cake to the board.
  • Place into a piping bag fitted with a Tip number 4 and pipe to decorate as desired.
  • Decorate with sprinkles and sweets. Leave to set.
