Panettone 'Bread & Butter' Pudding Cake

This is a delicious way to use up leftover Panettone that may have gotten a little stale. But to be honest, it is so delicious, you might want to buy a Panettone just to make it!

This also works really well with any rich dough leftovers, such as brioche and croissants. Plus you can substitute any dried fruits and nuts for the chocolate chunks.

  • 10 - 12 slices of stale panettone (if it is still quite fresh, leave it to dry out for in the air for 2 hours or placed in a warm oven for 10 minutes)
  • 50g butter, softened
  • 2 eggs, beaten
  • 250 ml milk
  • 100g castor sugar
  • 100g chopped
  • chocolate
  • Icing sugar 


Step 1

Preheat your oven to 180C

  • Grease your tin with easy release.
  • Butter the slices of panettone.
  • Arrange the slices around the tin, sprinkling chocolate in between the layers.
  • Whisk together the milk, sugar and eggs and pour over the slices. Bake for 50 minutes.
  • Leave to cool before turning out onto a plate. Before serving, dust with icing sugar.
