Ingredients:

  • Cupcake Recipe
  • Buttercream mix, coloured blue
  • Rolled cookie Recipe
  • 150 g White candy melts
  • 480 g Royal Icing Mix
  • Sanding sugars: Red, Orange, golden Yellow, Sky Blue and Kelly Green
  • Food Colours; Red, Orange, Yellow, Blue and Green
  • Trex (for candy melts)

Step 1

Prepare cakes

Bake and cool cupcakes

Step 2

Prepare Cookies

Roll the cookie dough out to approximately 5 mm thick. Cut 12 large circles, then use the smaller circle cutter to cut a centre in the middle. Using a sharp knife cut 1/6th of the ring away, to leave you with a ‘rainbow’ shape. Transfer to a tray and bake and cool as per recipe.

Step 3

Decorate the cookies

Divide the Royal Icing into five and colour each separately Red, Orange, Yellow, Green and Blue. Place each into a separate piping bag. Cut a small hole at the bottom of each bag approximately 5 mm wide. Starting with the Red, pipe a line around the outside edge of the cookie. Before it sets, use the Wilton Sugar writer to sprinkle the line with Red sanding sugar. Allow to dry for a few moments before tapping or brushing off the excess sugar. It helps if you have a sheet of paper underneath to collect any stray sugar. Repeat the same process with the orange royal icing and sanding sugar, piping a line just inside the first red line. Repeat with remaining colours; yellow, green and blue. Leave to fully set.

Step 4

Make clouds

Melt and prepare candy melts as per packet instructions and place into a decorating bag. On a sheet of parchment paper or silicon sheet pipe small cloud shapes. Leave to set in the fridge

Step 5

Finishing your cupcakes

Place the blue buttercream mix into the large decorating bag fitted with the 1M tip. Pipe swirls on the top of each cupcake and using the sugar writer sprinkle with blue sanding sugar. Place the rainbow cookie on the top, slightly pushing down into the cake to secure. Place the cloud in front of the rainbow cookie.
