Shortcrust pastry is easy to make and it is one of the most versatile pastries as it can be used for both savoury and sweet dishes

  • 220g plain flour
  • 100g butter
  • Ice cold water
  • Pinch of salt

Step 1

  • In your largest bowl, sieve the flour and salt from a height. This will incorporate as much air as possible into your pastry. 
  • Add the diced butter into the flour and work into the mix with a palette knife.
  • Work the last bit with your fingers, but to incorporate lots of air, take your fingers high up in the bowl.

Step 2

  • Sprinkle in 2 tablespoons of water and work in with a knife.
  • Bring together with your fingers (adding a little more water if needed), until the dough cleanly comes away from the side of the bowl.
  • Wrap in plastic and rest in the fridge for 30 minutes.
