  • Marvellous Meringue Mix
  • ½ Mango, cubed
  • 1 mandarin, segmented
  • 2 x passion fruit
  • 2 slices pineapple, cubed

Step 1

Making the Meringue

Preheat the oven to 110C. Line a baking tray with baking parchment or a silicon sheet.

  • Follow the packet instructions and add extract to flavour.
  • Fit a piping bag with tip 2D and fill with the meringue.
  • Onto a baking tray lined with parchment paper, pipe mini swirls of meringue to form a larger circle.
  • Decorate with sprinkles.
  • Bake in the oven for 1 hour then without opening the oven door, turn off the oven and leave to cool completely. 

Step 2

Filling the meringue

  • Whip the cream and place into a piping bag. Pipe a little cream into each of the swirls.
  • Decorate with fruit pieces and just before serving spoon over the pulp of the passion fruits.
