Unicorn Meringue Lollipops
These lolly's are pure fun and super easy to make. Match your meringue colour to your party theme for the most picture perfect dessert table. And for a more bite size treat, just pipe mini ones. Made using the Marvelous Meringue Mix and the Colour Swirl coupler for that 'fun at the fairground' party effect.

  • Teal Food Colouring
  • Violet Food Colouring
  • Marvellous Meringue Mix - 2 packs required
  • 200 g White Candy Melts
  • White nonpareils

Step 1

Prepare meringue batter.

Prepare meringue batter following recipe instructions. Divide the mix into three and colour one part teal, one part violet and leave the remaining part white.

Step 2

Prepare the decorating bags.

Prepare three 16 in. decorating bags with the three colour swirl adaptors and fill each bag a different colour of batter. Attach the coupler with the tip 1A. 

Step 3

Bake cookies.

You can use the circle cutter as an optional template by either drawing around it with a pencil and using the other side of the sheet, or by dipping it into icing sugar and ‘stamping’ the template onto the prepared tray. You will need two circles for one lollipop.

Starting from the centre of the circle, pipe a continuous swirl to fit the template. Bake and cool following recipe instructions.

Step 4

Prepare your candy melts

Melt and prepare as per packet instructions. Place in remaining decorating bag fitted with 12 tip.

Step 5

Attach meringues to stick

Working from the back pipe a line of candy melts onto the meringue from the base to 2/3rds up. Attach the cookie stick and pipe a little more of the melted candy melts over the top to secure. Still working on the back of the meringue, pipe all the way around the inside edge and before it sets, fix the second disc of meringue on top to form the full lollipop.

Step 6

Finishing touch

Before the candy melts harden, roll the edge into the white nonpareils to decorate.
